I found this great recipe on how to put a fresh spin on fish. These yummy kebabs use my favourite types of fish and are prepared in a healthy way. They are not only healthy, but are also very easy to prepare. No need to scratch out the matches and try to figure out the braai, you simply pop them in the oven and they’re good to go! It’s the perfect quick and easy meal for a midweek dinner or a light weekend lunch.
Ingredients:
- 200g haddock loins, skinned, cut into cubes
- 200g salmon steaks, skinned, cut into cubes
- 1 x 200g piece of fresh tuna or sword fish, cut into cubes
- About 8 cherry tomatoes
- ½ fennel bulb, roughly chopped and blanched
For the marinade:
- 1 tbsp olive oil
- Pinch of dried oregano
- 2 tsp paprika
- 2 tsp Canderel Green granules
- Small handful of coriander leaves, finely chopped
- ½ red chilli, de-seeded and finely chopped
- Salt and freshly ground black pepper
Before you Begin:
- Serves: 4
- Preparation time: 20 minutes
- Cooking time: 20 minutes
- Per serving: 962 kJ
Step by step:
- You will need small wooden skewers, soaked in water for 30 minutes to prevent burning.
- First mix together all the required ingredients for the marinade, taste and add additional seasoning if desired.
- Add the fish cubes to the marinade and ensure each cube is well coated before threading them onto the skewers along with the tomatoes and fennel. Pour any remaining juice over the skewers.
- Place them in a roasting tin then put them in the oven for about 15-20 minutes, turning them half way through. Remove and serve straight away with a lemon wedge for squeezing over if you wish.
